The thesis
Google Maps returns two hundred rooms called "oyster bar" in London and forty of them actually serve them raw. The reservation apps optimise for inventory. Nobody credits the farm the oyster came from, so consumers eat Colchesters and Loch Ryans and Duchies without ever knowing who grew them or how they got to the counter. OYSTR fixes that.
