Who runs OYSTR and why.

OYSTR is run by Samuel Chen, one person, based in Greenwich, London. Not a team. Not an agency. Not backed by anyone. Solo, self-funded, and intended to stay that way.

The premise

The idea started with a specific dinner in the winter of 2025 at a room in central London. Six oysters on the ice. Menu said "native" but did not name the estuary, the farm, or the family who had grown them. Not even a region. The waiter did not know. The manager did not know. Nobody in the room knew who had grown the oysters. Nobody was expected to.

There are twenty ways to find a restaurant on your phone and none of them tell you which room within walking distance is shucking properly right now. Michelin has too broad a net. TripAdvisor rewards volume, not fidelity. Google Maps returns two hundred rooms called "oyster bar" in London and forty of them actually serve them raw. Nobody credits the farm the oyster came from, so consumers eat Colchesters and Loch Ryans and Duchies without ever knowing who grew them or how they got to the counter.

OYSTR is the surface that fixes that. One category, done properly, everywhere.

The business

OYSTR is a viral consumer app (iOS, free) with a shop (merch, editorial objects), a monthly oyster subscription called The Bed, fresh oyster ordering, a small dinner series, and eventually a print Guide. Everything is fulfilled by third parties who already run the infrastructure — Wright Brothers Home for fresh oysters, Printful and small UK makers for merch, partner venues for dinners. OYSTR does the curation, editorial, brand, and consumer relationship. Nobody else.

A committed percentage of every subscription and every fresh order goes back to British oyster producers and restoration projects. Full details at /mission.

What OYSTR is not

Not a review platform. Not a booking utility. Not a social feed. Not a Michelin-style ranking body. Not a certification authority. Not a horizontal food-discovery app that also does oysters. Not a Vittles-style media brand.

OYSTR is a viral consumer app for oyster people, monetized through in-app commerce, fulfilled on other people's rails, with a mission mechanism baked in.

Who Sam is

Sam is a solo founder. Product designer by training, engineer by necessity, oyster obsessive by inclination. Based in Greenwich, works from a small flat with a view of the Thames. Has a day job in enterprise software that funds the OYSTR runway for its first year. Intends to leave the day job in Y2 when OYSTR revenue supports it.

Sam does not have a background in food media. Sam has never run a restaurant. Sam is a first-time founder of a consumer brand and is learning most of this in public. If OYSTR does anything genuinely well it is because the editorial voice is honest about what it does not yet know.
